The environment in a kitchen is hostile to paint. It is hot, humid, and exposed to all the elements of day-to-day home living. Wood expands and contracts as the temperature and humidity change throughout the day.
When you apply a layer of paint over a finished wood cabinet, that paint dries into a hard shell. As the wood underneath moves, the paint does not. This causes hairline cracks, particularly at the joints where the door frame meets the panel. Once those cracks open, moisture gets in. This leads to peeling and chipping.
